Chili Chocolate Meringues
Makes about 24 cookies
Ingredients
4 ounces semisweet chocolate chips
2 large egg whites
1/3 cup sugar
2 tablespoons ground chili pepper (mild ancho chili recommended)
1 tablespoon fresh lime juice
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 cup chopped walnuts
Directions:
Preheat oven to 375. Line 2 baking sheets with parchment paper. Melt chocolate in glass bowl in microwave or on the stovetop with the double-boiler method. Microwave in 30 second increments, stirring in between until all the chips have melted and you have reached a smooth consistency. In a medium size bowl, beat egg whites on medium speed until soft peaks form. Add sugar and beat on high speed until stiff peaks form. Add hcili pepper, lime juice, vanilla extract and cinnamon and briefly beat again until all the spices are mixed in. Gently fold in melted chocolate and walnuts with a spatula, leaving a few white streaks in between. Using about a teaspoon and a half of meringue mixture, drop cookies onto parchment paper leaving about an inch and a half in between each cookie. Cook for about 10 minutes and cool on wire rack.
