Have you ever noticed how a walk can change the state of things around you and inside of you? One of the many aspects I love about walking is that it can be done anytime and anywhere. All you really need is a decent pair of walking shoes and weather-appropriate clothing and you’re good to go.
Bitter Sweet Salad

Serves 4
3 cups romaine lettuce, chopped
1 cup spinach leaves, chopped
½ cup sweet onion, thinly sliced
¼ cup ricotta salata (cheese)
4 teaspoons cacao nibs
2 mandarin oranges
Dressing (Note: You’ll have leftover dressing – lasts up to a week when kept refrigerated)
½ cup olive oil
½ cup white balsamic vinegar
2 tablespoons minced shallots
1 tablespoon fresh minced ginger

Super Fudge

Makes about 40 pieces
1 cup cocoa butter, melted
1 teaspoon vanilla extract
1 cup plus 1 tablespoon cocoa powder
3/4 cup creamy almond butter (or peanut butter)
1 cup agave nectar (or honey)
Melt cocoa butter by placing in a large (pyrex) glass bowl over boiling water. Stir in vanilla extract.
