Please Pass the PEAS
Sweet, chubby peapods on the vine announce the growing season of spring.
If you are looking for a nutritional powerhouse-peas are it! Added to salads, stir-fry, soups and pasta sauces-peas are great way to get what’s good for you in a little package. A 100-calorie serving (about ¾ of a cup) gives you more protein than a ¼ cup of almonds or a serving of peanut butter! Plus one serving covers half your daily need for bone saving Vitamin K. It’s no wonder that the ancient Egyptians requested to be buried in their tomb with peas. As the song goes, all we are saying is give peas a chance!
Peas also contain healthy amounts of vitamins B1, B2, niacin, vitamin B6, vitamin C, folate, iron, magnesium, potassium and zinc (and very little sodium at just 5 milligrams per cup!)
