Green Chili Salmon Burgers

Salmon Burgers with Green Chili

Serves 4

Ingredients:

1 pound salmon fillets, skinned, chopped (all bones removed)

2 tablespoons salsa

2 tablespoons diced green chilies

1/4 cup cooked rice

1 teaspoon oregano

1/2 teaspoon cumin

1/4 teaspoon sea salt

1/4 teaspoon ground black pepper

Directions:

Remove skin from salmon filets and either chop into small pieces or pulse in a food processor fitted with metal blade. If using processor, add salsa, green chiles, rice, and spices and pulse until just mixed.  If using a large bowl then just mix all the above ingredients together.  Form into patties using about a heaping 1/2 cup of the salmon mixture. Cover and refrigerate until ready to cook.

Preheat grill or skillet to medium heat.

Cook salmon burger patties about 3 minutes per side.  You can also use a double-sided (press-style) grill and set for about three to four minutes total.

Per Serving: 153 Calories; 4g Fat; 23g Protein; 5g Carbohydrate; trace Dietary Fiber; 59mg Cholesterol; 238mg Sodium.
