Cherry Berry Crisp – Gluten-Free


1 cup brown rice flour
1 cup white rice flour
1 teaspoon baking powder
1 teaspoon cinnamon
3 tablespoons melted butter
2 each eggs
1 cup lowfat vanilla yogurt
1 cup cherries*, pitted and chopped
1 cup raspberries*
1 cup strawberries*, rinsed and chopped
2 tablespoons brown sugar
2 tablespoons slivered almonds
1 tablespoon chopped walnuts
2 tablespoons gluten-free oats
1 tablespoon brown sugar
1 tablespoon flour
1 teaspoon sugar
1 tablespoon canola oil

Preheat oven to 350° (convection oven, otherwise 375°).

Prepare 8 x 8 baking dish or pie plate by coating with cooking oil spray (like organic canola oil spray).

Mix together flours, baking powder, and cinnamon in a medium size bowl. Set aside. In another bowl, mix together butter, eggs and yogurt and mix with dry ingredients until just combined. This can be done in a food processor, which saves a little bit of elbow grease. Press this pastry mixture into the bottom of the pie dish.

Combine the cherries and berries and toss with two tablespoons of brown sugar. Layer this fruit mixture on top of the pastry crust. Sprinkle with slivered almonds.

Mix together remaining ingredients (walnuts through canola oil). Sprinkle on top of almond layer. Bake for about 35 to 40 minutes. Top with fresh whipping cream or yogurt if desired.

Per Serving: 310 Calories; 11g Fat (4g SAT); 7g Protein; 47g Carbohydrate; 4g Dietary Fiber; 66mg Cholesterol; 145mg Sodium.

*select organic berries and cherries when possible

    I wanted to see what was on the website. Saw a recipe for Gluten Free Cherry Berry Crisp. Was excited as I have family members who cannot eat gluten! As I read through the recipe, it calls for WHITE FLOUR. How can this be gluten free?

    Thank you so much for bringing this to our attention!! Proofreading error on my part for sure! It should have read white rice flour!… Funny because it would be highly unusual for us to put white flour in any recipe anyway! The post has been changed and we hope you will still give the recipe a try!
