Apple Tart
Serves 10
1 cup walnuts
1 cup brown rice flour
1/2 cup (GF) oat flour
4 tablespoons butter
2 tablespoons lowfat milk
2 tablespoons powdered sugar
6 medium tart apples
2 tablespoons butter
1 teaspoon cinnamon
2 tablespoons honey
Combine walnuts, flours, and powdered sugar in food processor fitted with an S blade. Process until walnuts are finely chopped and well combined into flour. Add butter to flour mixture in 1/2 tablespoon increments and pulse to mix. Add milk through top spout slowly and process until the mixture starts to form a dough ball. If necessary add a little bit more butter and milk as needed. Prepare a 9- or 10-inch tart form with removable bottom by coating bottom and sides with cooking oil spray. Press dough into tart form covering the bottom and up the sides. Use a fork to prick small holes in the bottom of the dough.
Preheat oven to 375°F. Set oven rack to lower middle position.
Peel and core the apples. Slice into quarters and then thinly slice to form little half moons. Begin layering the apple around the largest part of the dough and then keep layering all the way into the center. Begin a new layer on top when you have covered the entire bottom of the tart. Continue layering until all the apples have been used.
In a small saucepan or glass bowl (if using microwave), combine butter, cinnamon, and honey. Heat over low heat until butter is completely melted. Use a pastry brush to lightly coat the entire top of the tart with this butter mixture. You may pour the mixture over the apples and distribute with the pastry brush or just dip the brush into the mixture and apply.
Bake for 40 minutes or until apples begin to lightly brown. Allow to cool at least 10 minutes before slicing.
This is delicious served with homemade whipped cream and/or vanilla frozen yogurt.
