Gluten Free Banana Cupcakes

We had some bananas that needed tending to, sitting forlorn on the counter, just begging to be mashed and made into something yummy. Not having a lot of time, this was a total cheater recipe!! We used Pamela’s Gluten Free Baking Mix (1 3/4 cup), 3 bananas, about 1/3 cup of sugar (yep, that’s all, not counting the frosting!!), two eggs, a teaspoon of vanilla and a dash of salt. We baked the cupcakes at 350 degrees for about 18 minutes and they came out perfect and delicious. Frosting is totally optional!! For the indulgent frosting laden cakes, we used real butter, a little cream cheese, vanilla, powdered sugar and some natural food coloring to create the yellow effect. But these cupcakes don’t honestly need the extra frosting. A great weekend indulgence, especially after a hard workout!
