Fancy Fries

These “Fries” are actually baked, not fried. As a result you’ll get tons of flavor without the fat or trans fat that usually comes along with traditional fries. Sweet potatoes are about the most nutritious vegetables around.

Serves 4

2 medium sweet potato

2 medium yams

1 tablespoon olive oil

1/2 teaspoon sea salt

Preheat oven to 375. Line baking pan with parchment or aluminum foil. Alternatively you can just spray the pan with cooking oil spray.

Scrub and wash potatoes well. No need to peel potatoes.

Cut potatoes into thin strips and place in a large bowl. Add oil and sprinkle with salt and pepper.

Carefully place potatoes on prepared baking pan. Bake for about 30 to 40 minutes, turning so that all sides cook and brown equally. Fries are done with they reach desired consistency. We like them soft in the middle and slightly crispy on the outside.
