Pumpkin Chocolate Chip Cookies

 

Makes about 20 cookies

1/2 cup pumpkin puree

 

1 medium egg

 

1/2 teaspoon cinnamon

 

1/8 teaspoon nutmeg

 

2 ounces maple yogurt

 

1/4 cup applesauce

 

1/4 cup sugar (or maple syrup)

 

1 1/2 cups whole wheat pastry flour, or substitute gluten free flour mix

 

1 teaspoon baking soda

 

1/2 cup semisweet chocolate chips

 

Prepare a large baking sheet by lining with parchment paper or lightly coating with cooking spray. Preheat oven to 350.

 

 

Whisk together pumpkin through sugar in a medium size bowl. In another bowl whisk together flour and baking soda. Add flour mixture to pumpkin mixture and stir with wooden spoon to combine. Stir in chocolate chips.

 

 

Drop cookie batter by the heaping tablespoon onto prepared baking sheet. Bake for 15-18 minutes until very lightly browned on top. Makes about 2 dozen cookies.
