Apple-Pear Cake (Gluten Free)
1 1/2 cups brown rice flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
3 egg yolks
2 tablespoons ghee or (butter), melted
1/4 cup maple syrup
2 teaspoons vanilla flavoring or extract (if you need to avoid gluten, be sure to check the label)
3 egg whites
2 pears, cored, peeled and sliced
2 apples, cored, peeled and sliced
1 cup pear juice, or apple juice
2 tablespoons maple syrup
Preheat oven to 350. Lightly coat an 8×8 cake pan with cooking oil spray. Mix together dry ingredients. In a separate bowl beat egg yolks, melted ghee, maple syrup and vanilla extract. Add this mixture to the flour mixture. In another bowl, beat egg whites until stiff. Fold into cake batter. Add cake batter to pan and bake for 20 minutes. Allow to cool on wire rack.
Combine sliced apples and pears with pear juice and maple syrup in a skillet and simmer until the liquid becomes thicker and the fruit is soft but not mushy.
Arrange cooked fruit over cake and then spoon some of the remaining liquid on top as a glaze.
