Here’s one the easiest recipes on the planet.
1 cup quinoa – well rinsed and drained
2 cups water or low sodium vegetable broth
1/4 teaspoon salt (add to water for cooking quinoa)
2 tablespoons basil or cilantro pesto
In a medium size saucepan combine the quinoa with the salted water and bring to a boil. Lower heat and cover for approximately 15 minutes.
When all the liquid has been absorbed, remove from heat and scoop cooked quinoa into a bowl. Stir in pesto and voila – you now have “greenoa.”
