Grain-Free Berry Bars

 

Makes 9-12 bars depending on how large you slice them. Nutritional information for both amounts given below.

1 cup almond meal

1/4 cup ground flax

1/2 teaspoon ground cinnamon

2 tablespoons walnuts, chopped

6 medium dates, pitted and chopped

1 tablespoons almond milk

1 tablespoon coconut oil

1 tablespoon maple syrup

1/2 cup strawberries

1/2 Cup raspberries

1/2 cup blueberries

2 teaspoons ground flax

You can bake these bars in a conventional oven or for a raw treat you can prepare them for a food dehydrator (and substitute raw honey or agave for the maple syrup). If using conventional oven, preheat to 325 and prepare 8 x 8 baking pan by lining with parchment paper and lightly coating the side walls with cooking oil spray.

Combine almond meal, 1/4 cup ground flax, and cinnamon in the bowl of a food processor fitted with an S-blade. Pulse until well combined. Pulse in walnuts and dates then add almond milk, coconut oil and maple syrup and pulse until mixture comes together to form a ball.

Divide the mixture in half and roll out the mixture between two pieces of wax paper (or plastic wrap). Roll out to fit the bottom of the 8 x 8 pan. Place the bottom (crust) on top of the parchment lined pan. Roll out the top, but set it aside until berry mixture has been prepared.

To prepare berry mixture, rinse and dry the food processor bowl and blade. Add berries and pulse to puree. Add 2 teaspoons ground flax and pulse again until well blended. Pour the berry mixture on top of the bottom (crust) layer in the prepared pan.

Carefully place reserved top crust on top of berry mixture and use your fingers to lightly spread where needed to cover then entire area.

Bake for about one hour and allow to cool prior to cutting.

If you decide to keep it raw and use a dehydrator, layer the ingredients on top of a teflex sheet or grid and dehydrate at 105 degrees for about 15 hours (may need longer depending on desired texture/consistency).
