Watermelon Cucumber Salad with Feta and Mint

Serves 4

2 cups diced seedless watermelon (small dice – ½ inch cubes preferred)

1 medium cucumber, peeled and diced

1/2 cup crumbled feta cheese

1/4 cup diced chives

1/4 cup mint leaves chopped

1 Tbs. lime juice

1 Tbs. olive oil

salt and pepper for seasoning

Toss together all ingredients in large bowl, using hands to keep from crushing watermelon and cheese.

Season with salt and pepper.
