Grain Free Banana Bread

Makes 10 slices

1 1/3 cups almond meal

1/3 cup coconut flour

1 teaspoon baking powder

1 teaspoon cinnamon

2 tablespoons ground flax

1/4 cup coconut oil

4 medium eggs

1 teaspoon vanilla extract

2 tablespoons agave nectar

3 medium bananas, mashed

Preheat oven to 375. Prepare 5 x 9 inch loaf pan by coating with cooking oil spray or a light coating of coconut oil.

Combine dry ingredients and stir together until well mixed. In another bowl whisk together eggs, coconut oil, vanilla extract and agave nectar. Add mashed bananas to egg mixture.

Stir dry ingredients into wet. Scoop into prepared bread pan. Bake 45 minutes or until toothpick inserted into center of bread comes out clean.

Per Serving: 243 Calories; 12g Fat (6g sat); 12g Protein; 22g Carbohydrate; 5g Dietary Fiber; 7g Sugars: 85mg Cholesterol; 86mg Sodium.

    This is delish. I might try it with pumpkin instead of bananas too!
