Fresh Salmon Burgers
2 1/4 pounds wild salmon filet
2 each green onions
1/2 teaspoon fresh lime zest
1 tablespoon fresh lime juice
1 medium shallot, minced
1 tablespoon fresh cilantro, chopped
1 teaspoon fresh dill, chopped
2 tablespoons gluten free bread crumbs*
1/2 tablespoon sea salt
1/2 tablespoon pepper
Carefully remove the skin from the salmon filet and cut the fish into small pieces.
Add the salmon along with the rest of the ingredients to the bowl of a food processor fitted with the S-blade.
Pulse to bring the ingredients together, but stop before the mixture gets mushy.
Remove the mixture to a bowl and with clean hands form into patties about 4 to 5 inches in diameter.
Grill patties over medium high heat on clean grill grates that have been lightly coated with oil. Alternatively you can place a piece of foil coated with cooking oil spray on the grill or use a grill pan.
Cook for about 3 to 4 minutes on each side or to desired doneness.

*You can make your own gluten free bread crumbs with one slice of toasted gluten free bread either crumbled by hand or in a food processor. Gluten free “panko” bread crumbs are available at some natural food stores or online through amazon.com.
