Grain Free Apple Pumpkin Kugel

Kugel is a traditional Jewish side dish or dessert. It is often made with Egg Noodles, but basically by definition it is more of a pudding of sorts. The literal Yiddish translation means “sphere” or “ball.” We especially wanted to make this recipe in honor of grain-free enthusiasts celebrating Rosh Hashanah and Yom Kippur.

Serves – About 10

4 medium apples, peeled and cored

3 eggs, beaten

1 teaspoon vanilla extract

1 tablespoon melted butter

2 tablespoons honey

1 cup canned pumpkin

3/4 cup almond meal flour

1/2 cup coconut flour

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 teaspoon baking powder

Preheat oven to 325. Prepare 7 x 10″ serving dish by coating lightly with cooking spray. Optional: line with parchment paper.

Peel and core apples. Grate 2 of the apples and dice the remaining two. Combine grated apples with eggs, vanilla, butter, honey, and pumpkin. Whisk together until well mixed.

In another bowl, combine almond flour, coconut flour, cinnamon, nutmeg and baking powder. Stir well.

Fold dry ingredients into wet and add diced apple pieces. Stir until well mixed.

Bake for about 55 minutes on lower rack. Allow to cool at least 20 minutes before serving. Spoon into serving dish – optional is to top with yogurt or homemade whipped cream.
