Dave’s Killer Banana Nut French Toast
This tasty breakfast treat is not for the grain-free, carbohydrate- or calorie-phobic – but if you’re really into a delicious, high-fiber, satisfying way to begin your day, here it is! Exercise portion awareness and you’ll be great to go.
1/2 medium banana, divided
1 medium egg
1/2 teaspoon vanilla extract
3 tablespoons lowfat 2% milk
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon rolled oats
3 slices Dave’s Killer Bread
Cooking oil spray
1 tablespoon chopped walnuts
2 teaspoons maple syrup, optional
Use a fork to mash ¼ banana in a medium size shallow bowl (this should give you about 2 tablespoons mashed banana). Add egg, vanilla, and milk and use fork to whisk the ingredients together until banana and egg are well incorporated. Add spices and oats and whisk again until evenly distributed.
Heat medium size skillet over medium high and coat lightly with cooking oil spray.
Dip each slice of bread into banana-egg mixture and place on hot skillet. Cook for about 3 minutes on each side or to preferred doneness.
Serving is one plus ½ slice. Slice each piece of bread in half and place 3 halves on each plate. Top with sliced banana and chopped walnuts. Serve with maple syrup if desired.
Other fun topping ideas: top with 1 or 2 teaspoons almond butter, chopped macadamia nuts, fresh berries, Greek yogurt, a poached egg – the possibilities are endless!
