Ingredients:
1 tablespoon butter, canola or olive oil
1 large onion, chopped
2 each celery stalks
2 each garlic cloves, minced
2 each Granny Smith apple, peeled and chopped
1 1/2 teaspoons curry powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
