Super quick and easy to prepare. Wash the endive and remove the leaves one at a time, make sure they are nice and clean and dry. Rub the ends on a half of a lime to preserve their color.

1 medium onion, sliced
2 pounds broccoli, stalks and florets chopped
6 ounces spinach
7 cups low sodium vegetable broth
½ cup rolled oats (gluten free)

1 1/4 pounds cooked skinless boneless chicken breast halves (about 3)
3/4 cup finely chopped celery
1/3 cup plain Greek yogurt
2 tablespoon lemon juice
1/4 cup finely chopped red onion
2 tablespoons chopped fresh tarragon
